Phytochemical and bioactive compounds analysis of the lyophilized pulp, peel, and seeds of Salacia crassifolia fruit with potential as a functional food

Salacia crassifolia, commonly known as “bacupari do Cerrado”, is a fruit highly valued by the local population. However, limited information available in literature regarding its constituents and/or functional properties. This study aimed to determine phytochemical profile, antioxidative activity using DPPH and ABTS assays, quantify phenolic compounds, carotenoids, vitamin C freeze-dried pulp, peel, seeds of bacupari fruits. The profile revealed presence various bioactive compounds. total content, determined Folin-Ciocalteu method, ranged from 2095 1371 mg gallic acid equivalent/g dry mass. antioxidant analysis showed EC50 values ranging 3.88±0.03 0.45±0.12. flavonoid content varied 9.56 9.91 quercetin equivalent. Vitamin lyophilized pulp was found be 48.55 mg/100 g, while carotenoid 25.72 g. These results demonstrate that species rich highlighting significant potential for both food pharmacological applications.
